The principles of Balentine Builders LLC recently completed renovations in the Sawgrass Mills Mall food court. The project consisted of revamping existing interior space to comply with franchise requirements for the new Bananas/Greenleaf’s franchise owner.

The first step was to break down and remove existing food service equipment – walk-in coolers and pizza ovens and all existing fixtures. New HVAC and electrical were required as well as new framing and drywall.

All new interior features, signage, food service equipment, cabinets and counter tops were provided by the franchise and had to be adapted as necessary on site. Every detail had to be as per franchise requirement – right down to the wall tile layout! The time constraints were one of the most demanding aspects of this job. Most of the work had to be completed between the hours of 10 p.m. and 6 a.m. so it wouldn’t interfere with the day to day operations of the food court and the mall activity.
